Battle of the Ruffages
~Birthday Club~
Reuben Dip
1 can saurkraut, drained
3/4 lb. Honey Maple Glazed Boar's Head Turkey~chopped
Lite 1000 Island Dressing (1/4-1/2 c.)
Lite Mayo (1/4 c.) Salt, Pepper, to taste.
Mix above ingredients, and either bake at 350 for 20 mins. OR microwave for 6 mins.
Rye Mini Toasts or Rye Melba Rounds~serve on side
Favorite Salad
Torn Red Leaf and Boston or Bibb Lettuce
1/2 log goat cheese
1/2 c. pecans
chopped green, yellow, red peppers
Champagne Dressing
Toss and serve~
King Ranch Chicken ala Brittney Bottoms
6 chicken breasts, chopped
1 small onion, green bell pepper, chopped
1 pkg. corn tortillas, torn
2+ cups grated cheddar cheese
1 can ROTEL tomatoes & green chilies
1 can cr. of chicken soup
Bake chicken @ 350 for 45 mins. Sautee onions, peppers add chicken, Rotel, soup and stir. Spray pan with PAM arrange 1/2 torn tortillas on bottom of dish. pour half of chicken mixture over this. Sprinkle with cheese. Repeat. Bake at 350 for 30-45 mins. until bubbling around edges.

CHEESE GRITS
Quick Cooking Grits (found by oatmeal in stores)
chicken broth (small can)
Cream Cheese (lite or reg.)
Sharp Cheddar (I use Cabot 50%rf)
Garlic Powder, Salt and Pepper to taste, Red pepper flakes
Cook grits according to directions, sub a can of water for a can of chicken broth. If you need to add a little more water or chicken broth once you've added cheeses, that's ok, too. Once grits have cooked, add cheeses, spices, stir constantly. Add more liquid if it's too thick, it will be absorbed when stirred.
Saundra's Green Bean Bundles
3 Canned Whole Green Beans
Bacon 1 pkg.
Soy Sauce (1/4c.) , Brown Sugar (1/2 c.)
Roll a piece of bacon around about 8-10 beans, mix together sugar and soysauce, sprinkle on more if desired.
Line a PAM sprayed dish with bundles & bake at 350 for 30-40 mins. until bacon is browned.
Chicken Breasts Supreme
6-8 chicken breasts
bacon, 2 pkgs. Carl Buddig Chipped Beef (chopped) cream of mushroom soup 1 lg. can, sour cream (1/2 c.) white wine (splash) no need to salt, only pepper.
Wrap chicken with a piece of bacon, spray a pan with PAM, line pan with chipped beef, lay the chicken breasts on top, cover with mixture of rest of ingredients.
Bake at 300 for 3 hours, very tender!!
